Hello. This is a small honey or honeycomb operation for grandma's preserves that utilizes the bees dropping off pollen as a trigger to harvest the nest.
By activating the farm in this way there is a number of wasted bottles needlessly being dispensed while the hive is not yet full. There is no waste with using shears for honeycomb and the shears will not lose durability when trying to harvest honeycomb when the hive is not full.
The redstone for this is pretty simple with 6 observers, 1 dispenser, 1 hopper minecart, 1 rail, 1 hopper and a storage container for each Beehive.

With 'Ol Bessy's approval we move onto how to get the observers and a dispenser placed.
First remove some leaves and a few logs to make room for the build. You will want to replace some of these blocks later.

In the above picture we can see an observer watching the hive on the right for activity witch will send the signal up over and down into the Dispenser via 5 more observers.

This angle shows the observers sending a signal into the Dispenser that is on top of the Hive.
When it is all put together we end up with a working honey/honeycomb farm with minimal invasive impact on the ecosystem.
