I made this purely for the science.

Task; can lava fill a cauldron while completely submerged in water.

*points - the lava source needs to be contained so it does not turn into Obsidian.
- the pointed dripstone will not drip lava if it is in water, (make it so no water merges in the pointed dripstone space)
- waterlogged trapdoors allow the water to be right next to the pointed dripstone without it merging together and waterlogging the pointed dripstone.
- lava can be removed from the cauldron with an empty bucket, get close enough so you do not pick up water.
- waterlogged trapdoors where the lava is makes the lava turn into Obsidian.
- we can not see the lava drips through water, I had to swim up into the pointed dripstone to actually see it dripping.
- opening and closing the waterlogged trapdoors will allow the water to waterlog the pointed dripstone. do not activate trapdoors after construction.

This is what I came up with;

As you can see, success. A lava farm can function underwater with some exceptions.

Remember, this was only for science.

Hope this helps, have fun out there.
